“Tales From the Member Trenches”
Hi, Fitness friend!
Here is the crockpot chicken taco recipe! SO EASY!
*4-6 chicken breasts (frozen or fresh)
*one jar of good quality salsa
*one can of black beans
*organic extra sharp cheddar (tip: you don't need as much when you use extra sharp cheddar!)
Put the chicken breasts in the crockpot in the morning and put it on the lowest setting. Pour the salsa over the top and allow it to slow cook until the chicken is cooked all the way through.
Shred the chicken with two forks.
Drain and rinse the can of black beans and mix in with the shredded chicken.
Serve in a small bowl and top with lettuce, cilantro, diced avocado and a squeeze of lime!
Dinner will be ready for you when you get home from work! Simple, healthy and DELISH!!!
