“Tales From the Member Trenches”
I made this recipe for Thanksgiving this year. It was a BIG HIT! It is thick, rich, and has the right POPS of flavor that fit well with the holidays! The recipe below is for a single serving. I multiplied it by 7 for my family.
Peel and cube sweet potatoes. Cook in boiling water until tender.
Place sweet potato, pepper, broth or water, ginger, oil, and miso in blender. (If you want chunky soup, set aside some chunks of pepper.) Blend thoroughly, adding more liquid to achieve desired soup consistency. Transfer to a pot and gently heat on low until hot. Add salt, and red curry powder as desired. Serves 1.
